Senes it is the first Riserva di Cannonau signed by Argiolas. The production vineyards are located on the hills of Siurgius Donigala and belong to the Sisini estate, north of Cagliari. The age of the vines is quite high and this gives richness and value to the grapes that originate from them. The yield is deliberately reduced to a minimum, so as to favor the quality of the grapes over quantity. The soils are defined by calcareous marls, which give finesse to the grapes. The winds coming from the mistral and the sensitive temperature changes between day and night further contribute to giving an elegant final product. The alcoholic fermentation of the must takes place in steel vats and is followed by a period of first maturation in concrete tanks, where the wine undergoes malolactic fermentation. The vinification phase ends with a rest of about 12 months in small oak barrels and a further refinement in the bottle.
Tasting Notes
Intense ruby red to the eye. On the nose the fleshy notes of blackberry and plum combine with the sensations of macerated flowers, sweet spices and licorice. Dense, warm and full-bodied on the palate, fruity in the long aromatic trail.
Pairings
Structured first and second courses of land, of the Sardinian tradition and not, well-seasoned meat and vegetable dishes and medium and long-aged cheeses.
