The particular softness and sweeter notes of Bertani's Ripasso are the result of a skilful blend of the selection of grapes from Valpantena and the Classica area. In fact, from the first comes the softness and roundness, characteristics that flow into delicate notes of chocolate, from the second the more fruity notes such as cherry, morello cherry, currant. Bertani's Valpolicella Ripasso DOC is a great red that is traditionally left to ferment after the winter together with the Amarone skins in order to increase its structure and complexity. An ancient, unique practice, followed by a slow aging in cask of just under 12 months, a period necessary to find that harmony and balance that characterize the best Ripasso.
Tasting Notes
Intense purple red, the nose expresses very intense notes of dark fruit, blackberry, black currant and ripe cherry. On the palate it is full, soft and round, characterized by a lively and intense nerve. A slight trail of flavor accompanies the sip towards a finish of great persistence, characterized by continuous references of ripe fruit.

For the whole meal, it goes well with roasts, game, stews, braised meats and particularly tasty cheeses.
