Bellovedere viene prodotto solo nelle annate caratterizzate da un ottimo andamento climatico e dal raggiungimento della piena maturazione. Vendemmia a fine Ottobre, una volta raggiunta la maturità fenolica e l’equilibrio tra zuccheri e acidità. Selezione degli acini, macerazione e fermentazione per circa 30 giorni in tini tronco-conici aperti di rovere di Slavonia. Conversione malolattica e successivo affinamento parte in barriques, partly in tonneaux, partly in cement and partly in the same fermentation vats for about 18 months. Racking, blending and bottling, during the most propitious phase of the moon, without filtration, one year before release.
Tasting Notes
Dark ruby color with shades of purple ink. The bouquet highlights aromas and flavors of dark plum, blackberry nectar and aromatic herbs, enriched with notes of coffee and cocoa. In the mouth its majestic character explodes, it is both dense but fresh, characterized by noble and powerful tannins, and a note of violet perfume. The finish is long and clean with an endowment of minerality that enhances the characteristics of vivacity, power and cleanliness.
