Philipponnat Champagne Blanc de Noirs Extra Brut is made with the first pressing of Pinot Noir grapes, coming from Premier Cru and Grand Cru vineyards of the Montagne de Reims and Mareuil-sur-Aÿ.
The vinification takes place partly in steel and partly in wood with malolactic, after which there is assembly and aging for at least 5-7 years on the yeasts, in which the maximum complexity of the wine is developed and its secondary aromas and tertiary.
Tasting Notes
Of medium intensity golden yellow color, with creamy and light bubbles, of nice persistence, it expresses evident sensations of citrus and white flowers on the nose. On the palate it is mineral and ample, expressing the elegant vinosity and fruitiness typical of Pinot Noir, as well as its structure and a beautiful volume, which close on a finely toasted finish.
Pairings
Perfect in the company of game, the foie gras is magnificent but it is also exceptional fresh, served as an aperitif.
