The grapes destined for the production of Sodale, the second wine of the Estate, come from the same vineyards of Montiano. The utmost attention during the harvesting phase and the subsequent selection of the grapes guarantee the best quality to the wine. The grapes are harvested by hand and taken to the cellar, where they are selected and fermented in stainless steel tanks. The management of the temperature and that of pumping over and delestage allow to obtain a wine
balanced with express fruit and soft tannins. At the end of the fermentation the wine is placed in barriques, where the malolactic fermentation takes place and ages for 9 months.
Tasting Notes
The color is intense red, with violet reflections; on the nose, notes of red fruit and sweet spices emerge which blend in perfect balance with the vanilla notes of the wood. The taste is round, harmonious, pleasant with a persistent finish and sweet tannins.
Pairings
Elegant and full-bodied red to combine with red meats and grilled game.
