The delimited area for the production of Trento DOC wine includes the territories of the province of Trento located in the Valle dell'Adige, the Valle di Cembra, the Vallagarina, the Valle del Sarca, the Valsugana and the Giudicarie valleys, practically affecting the same territory as the Trentino DOC. The production area of Trento DOC affects an area of about 800 hectares of vines within this territory and the vineyards used for production, mainly located on a slope, go up to 800 meters above sea level.
The production of classic method sparkling wine in Trentino is more than a century old. In the last hundred years, the production of sparkling wine has progressed continuously both in terms of the number of producers and the quantity of bottles obtained. Trento DOC was the first Italian denomination to be reserved exclusively for sparkling wine obtained with the method of refermentation in the bottle.
Trento DOC is produced using the vine varieties locally most suitable for sparkling wine with the method of refermentation in the bottle: Chardonnay, Pinot bianco, Pinot nero and Pinot Meunier. The harvest of the grapes destined for the production of Trento DOC sparkling wine usually takes place earlier than the grapes destined for the production of still wines to ensure the right balance between sugars and acidity necessary to obtain a quality sparkling wine. The vinification of the grapes takes place mainly in purity with, if necessary, subsequent assembly of the various components in the phase of constitution of the batch (cuvée).
In the elaboration of the Trento DOC sparkling wine, only the “classic method” of refermentation in the bottle is allowed, including the shaking (remuage) and disgorging (dégorgement) operations. The elaboration process foresees a minimum period of stay on the lees lasting 15 months, raised to 36 months for the “reserve” type.
