Among the black berried grapes, in addition to Montepulciano, Ciliegiolo, Merlot, Cabernet Sauvignon and in some cases also Barbera, the most important native vine is undoubtedly the Cesanese, which is the basis of wines of absolute excellence. The white wines are obtained above all with Malvasie and Trebbiani, among which we remember the Malvasia Bianca Lunga, Malvasia bianco di Candia, Malvasia del Lazio, Trebbiano Giallo, Trebbiano Toscano and Trebbiano del Lazio vines.

The most important wine area of Lazio are the hills that rise to the south-east of Rome, called Castelli Romani, dotted with medieval villages and villas, vineyards and woods. Here white berried grapes such as Malvasia of Lazio and Trebbiano yellow; then the Bellone and other local varieties.

Between Rome and Frosinone, in Ciociaria, there is the Cesanese area, an autochthonous black grape variety that gives rise to red wines of great structure. In the blends, Cesanese is often flanked by Barbera, Montepulciano and Sangiovese.

In the province of Latina, red wines prevail, for example in the Aprilia DOC. In the coastal territory that goes from Latina to Terracina there is the Circeo DOC denomination, with reference to the promontory that characterizes its landscape.

In the province of Viterbo, on the volcanic soils around Lake Bolsena, mainly white grapes are grown such as Trebbiano Toscano and Giallo, as well as Malvasia puntinata (from Lazio). The most famous wine isEast! East!! Est !!! of Montefiascone DOC; among the red wines the Aleatico di Gradoli DOC.
