Il Cabernet Istrice è stato il primo vino rosso di Elena Walch. A quel tempo costituito da una porzione predominante di Cabernet Franc e solo una piccola parte di Cabernet Sauvignon, il vino mostrava “le sue spine”, proprio come i piccoli ricci presenti nel parco della cantina di famiglia. Oggi, la percentuale che compone “l’Istrice” è totalmente cambiata con il 90% di Cabernet Sauvignon ed il 10% di Cabernet Franc. Attenuate le durezze (le sue “spine”), questo vino oggi ha guadagnato in eleganza e finezza e continua ad essere uno dei vini rossi favoriti nella casa Walch.
Cabernet “Istrice” comes in a bright garnet red, with intriguing spicy aromas reminiscent of red berries and cherries combined with seductive spices such as white pepper and chocolate. On the palate it surprises with great and fresh sapidity, precise and elegant tannic structure together with a fruity and spicy density with a persistent finish.
Ideal to accompany red meats, game, game and aged cheeses.
