The grapes with which the Oddero winery produces its Barolo DOCG come from three different vineyards and are left to ferment in contact with the skins for about twenty days. Also the aging in wood, in Austrian and Slavonian oak barrels, takes place separately and lasts a good 30 months. A further refinement in the bottle of six months completes the wine before being marketed. It is wonderful and rich in nuances, well expressed in all its components. It is a must to wait for it for at least two or three years, but if you could resist longer, the benefits would be even greater.
Tasting Notes
Bright garnet red color, with warmer reflections over time. Unmistakable, very pleasant, intense and ethereal aroma, very persistent, sometimes spicy, with hints of truffle, licorice, withered flowers. Dry taste, with important and full tannins.
Pairings
Excellent in combination with tasty and structured preparations, based on red meats or game. Together with a good piece of Parmigiano Reggiano, it can also become an excellent meditation wine.
