Philipponnat Champagne Royale Réserve Brut derives from Pinot Nero, Chardonnay and Pinot Meunier grapes, coming from the most beautiful Premier Cru and Grand Cru vineyards in the center of Champagne, with a strong prevalence of Pinot Noir from the Mareuil-sur-Aÿ area which mostly characterizes.
This cuvée, obtained exclusively from the first pressing, is completed with a 25-35% of reserve wines that age exceptionally in wooden barrels and are managed with the Solera method, enriching in complexity. Aging, which takes place entirely in the fresh cellars of the Maison, lasts for 3 years on its lees, much longer than the 15 months required by the champagne specification.
Tasting Notes
Brilliant golden yellow color, with amber reflections. On the nose it shows hints of aromatic herbs (lime and thyme), brioche and hazelnut and wild berries, with a nice hint of citrus and honey. In the mouth, it opens immediately with a generous body and good freshness, developing with energy and vigor on notes of red currant and raspberry, with references of biscuits and freshly baked bread. Final, long and mineral, of great balance and harmony.
Pairings
It goes well with second courses with white meat or fish dishes. Excellent with seafood and cured meats.
