Questo grande Champagne riposa sui propri sedimenti per lunghissimi anni. Il dégorgement viene effettuato solamente all’uscita dalla cantina. Ne nasce uno Champagne che vede esaltati i suoi aromi all’infinito. Ogni altra parola per lo Champagne Extra Brut R.D. di Bollinger sarebbe superflua: sublime.
Giallo cristallino e brillante. I sentori che arrivano al naso sono intensi e molto profondi, costituiti da note di anacardi, aromi mielati e profumi che ricordano il sottobosco e la padellata di funghi. Anche in bocca gli aromi sono complessi e rievocano i frutti a nocciolo, la moka, il cacao e il tartufo. Straordinaria è la struttura.
È perfetto se abbinato a risotti, formaggi stagionati o groviera svizzero. Ottimo con il risotto ai funghi porcini e tartufo nero.
