The Collio Sauvignon Ronco delle Mele di Venica was born in vineyards located in the municipality of Dolegna del Collio, in the province of Gorizia. It is made entirely from Sauvignon Blanc grapes, harvested by hand and left to macerate at a controlled low temperature in containers that offer the grapes a special protection from oxygen. Fermentation takes place mainly in steel tanks at a controlled temperature, and for a part in large wooden barrels with aging for 5 months on its own yeasts.
Tasting Notes
In the glass it has a straw yellow color. The nose opens with intense and elegant aromas of elderflower, peach leaf and pepper. On the palate it is oily and full, with a pleasantly silky and soft finish.
Pairings
Excellent in the company of ham-based appetizers, this white wine is ideal in combination with delicate soups, crustaceans and salted fish.
