Exultet is an elegant and refined interpretation of the Fiano di Avellino. It is a cru produced exclusively with grapes from a single Fiano vineyard located in Lapio. It has a bright yellow color with green reflections and clear varietal aromas of lime, acacia and thyme. With a dense and continuous structure, it develops aromas of exotic fruit, candied citrus and honey in a very light mineral matrix. Its particular elegance also derives from the short stay, during fermentation, in small oak barrels. It is a long-lived wine that can age well even for a few decades thanks to its richness in aroma precursors and its freshness and integrity of taste. The name given to the wine originates from Mirabella Eclano's Exultet in which a tribute to bees is also reported. The Exultets are liturgical scrolls from the southern Middle Ages; they are a sort of ante litteram multimedia product made up of parchment sheets sewn together on which the text of Benedictio Cerei is transcribed, accompanied by musical notations and illustrated by miniatures that run in the opposite direction to the writing.
