The manifesto of the Pavò house, the Franciacorta Brut, is the real business card with which the corporate style presents itself and makes its way starting from Iseo, in the province of Brescia, within one of the most renowned Italian areas for production of Classic Method.

It is made up of Chardonnay 90% and Pinot Nero 10%. The alcoholic fermentation of the must takes place partly in steel and partly in barrique. The malolactic fermentation starts spontaneously before refining in steel for 5 months and in wood for another 6. Bottled with the refermentation yeasts, it rests in their presence for a period of at least 30 months.

Tasting Notes

Straw yellow, with a fine and persistent perlage. Pungent traits of gooseberry and citrus emerge on the nose, on a background that extends to sweeter fruit and pastries. In the mouth it is fine, fresh and savory, with a long persistence of the yeast.

Perfect to accompany an aperitif, excellent in combination with fish main courses.
