Nebbiolo "Ochetti" is a Piedmontese wine gem that can boast a prestigious origin. In fact, it comes from one of the most suitable wine-growing areas of the Roero, where the Renato Ratti winery owns small but well exposed parcels. The harvest usually takes place between mid-September and mid-October and the bunches, once harvested and transferred to the cellar, are vinified in red in a classic way. The must obtained from the pressing of the grapes ferments in steel containers at a controlled temperature of 30 degrees, macerating for 10 days. An 8-month aging in oak barrels concludes the work.
Tasting Notes
Not very intense ruby red color. Fine, delicate and persistent bouquet with hints reminiscent of wild strawberry and raspberry. Taste pleasantly bitter, velvety, light and full at the same time.
Pairings
Wine suitable for grilled and spit-roasted red meats, game, fondue with truffles, agnolotti, white and red meat dishes of the great cuisine with spicy sauces.
