The grapes of the Rosso Paestum Igp wine are harvested when fully ripe by hand and the bunches are carefully selected. Maceration and alcoholic fermentation take place at a controlled temperature for about three weeks in stainless steel vats. Malolactic fermentation and a long aging in oak barrels follow.
In the glass it has an intense ruby red color with violet reflections. On the nose, it expresses hints of red fruits, sour cherries and ripe plums, sweet spices such as white pepper and cinnamon streaks accompanied by balsamic notes. A wine with excellent body, with round and silky tannins, suggests an excellent aging prospect, from 8 to 10 years.
Ideal to accompany second courses of red meat and game, aged cheeses and truffle-based dishes.
