Starting from 2014, a team of agronomists and soil experts of international reach, together with the oenologists of Mandrarossa, carried out a scientific study on calcareous soils which allowed to identify a microterroir with a very high qualitative potential. From the mapping of these soils, unique vineyards emerged.
From calcareous soils, a fragrant Grillo is born with seductive notes and unmistakable aromas, the result of the dialogue between the authenticity of tradition and the search for innovation. It is the "Bertolino Soprano" Grillo di Sicilia, fermented in "tulip" cement barrels and then aged for 11 months in French oak barrels.
The Bertolino Soprano tells a moment linked to Santo's childhood, whose family takes care of that Grillo vineyard, describing its colors and uncontaminated landscapes that now live again in the wine label.
Intense and luminous golden yellow in the glass. Floral scents infused with slightly herbaceous notes, intense aromas of white peach and cedar; on the palate it has the right acidity that makes it pleasantly fresh and savory.
It is enhanced with vegetables and legume soups, baked fish with potatoes, pasta with tuna bottarga.
