Amarone della Valpolicella Classico The forest di Cesari was born in vineyards located in the hamlet of Castelrotto di San Pietro in Cariano, in the province of Verona. It is mainly produced with Corvina grapes and a small part of Rondinella grapes, harvested and selected only by hand. Fermentation takes place, with maceration in contact with the skins for 20-30 days, in stainless steel tanks at a controlled temperature. After malolactic fermentation, the wine is aged for 24 months in French oak barrels and in large Slovenian oak barrels, before being bottled.
