Barolo di Borgogno is born in vineyards located in the municipality of Barolo, a fabulous terroir known for the production of wines of great value. It is produced exclusively with Nebbiolo grapes, harvested manually during the end of October. Fermentation takes place at a temperature of 22-29 ° C for about 12 days. Subsequently the wine is aged in oak barrels for 4 years and for another 6 months in the bottle, before being put on the market.
Tasting Notes
Ruby red with garnet, slightly orange reflections. The nose reveals beautiful aromas of dried violets, notes of small red fruits and only afterwards delicate spicy hints. On the palate it is dry, full-bodied, characterized by an austere tannin well balanced by a certain warmth. Balsamic, it closes with a slightly astringent finish on the fruit.
Pairings
For the whole meal, it goes well with red meat dishes and medium or long aged cheeses. Even alone, at the end of a meal.
