Natural fermentation without added yeasts, at a controlled temperature in concrete tanks, aging for four years in Slavonian and French oak barrels, and finally six months of aging in the bottle: the ingredients are simple and the recipe is simple, but excellent is the result, which takes its name in this case of Barolo Cannubi, labeled “Borgogno”. A red son of the sub-area of the same name, whose terroir manages to guarantee the wines an extraordinary complexity, while also offering longevity and elegance. It is a Barolo that tells us all the best of the denomination to which it belongs.
The ruby red in the glass is crossed by garnet flashes. The olfactory is complex and articulated, opened by ripe fruity notes of raspberry, blackberry and currant, followed by floral nuances and completed by hints of cinchona, iodine, tobacco and leather. The drink is juicy and fresh, smooth in the tannic texture and impressive in the structure. The closure is balmy.
To be chosen with red meats or game, it is fabulous with jugged hare.
