The Fiano Campania PGI grapes are harvested manually at the beginning of October and are refrigerated before being subjected to crushing and destemming. The cold skin maceration process, which contributes to the exaltation of the personality of this wine, is followed by the soft pressing of the grapes and the clarification of the must by natural decantation. Once the yeasts have been inoculated, the wine begins a long alcoholic fermentation, at low temperature, in refrigerated stainless steel vats and in small wooden barrels (10% of the total). Refinement takes place on fine lees with frequent batonnage. The aging in the bottle lasts about ten months.
Tasting Notes
Fiano Vesali has an elegant and unmistakable drink and reveals the peculiarity of the territory and the uniqueness of altitude and exposure of the vine of origin. It is intense and bright straw yellow, the nose offers a dense and lively extension of fragrant notes of chamomile, musk, acacia and eucalyptus adorned with honeyed puffs and nuts. The mouth is full, savory, wonderfully harmonious and expressive, with a pleasant freshness and excellent persistence.
