Core Bianco is an IGT Campania white wine, made from Fiano and Greco grapes. It is produced in Sannio, in the province of Benevento, and bottled in the Montevetrano farm. The origin of the grapes has long been evaluated and researched, finally finding in this area the place where the volcanic nature of the soil with the presence of tuff, volcanic ash and limestone allows these grapes to express themselves with the highest quality.
Core bianco is also followed by oenologist Riccardo Cotarella who, as for Core rosso, has realized an intuition of Silvia Imparato: wanting to represent a typical wine of the territory with the same quality as Montevetrano. It is a fresh and mineral wine, vinified separately and aged with cryomaceration and maturation on the lees for 7/8 months with weekly batonnage. An intact wine of beautiful freshness with a well-balanced acidity, it has a floral and fruity nose of citrus and white peaches that bring back to the palate a beautiful aromatic complexity with a background of rosemary. A density that opens and expands smoothly with a savory finish.
Tasting Notes
It presents itself to the eye of a bright straw yellow color. Intense aromas of white and yellow pulp fruit and citrus fruits appear on the nose, including peach, pear, apricot and orange peel, floral notes of white flowers and wildflowers, hints of dried fruit, including walnut and almond, to finish with slight mineral hints. In the mouth it is broad, fresh, soft and elegant, characterized by a refreshing sapidity and a pleasantly long finish that recalls Mediterranean and floral notes.
Pairings
It goes perfectly with first and second courses based on fish: in particular it goes perfectly with seafood or with potato gateau with smoked provola.
