Dark is a Carignano del Sulcis signed by Mesa, a winery located near the Sardinian municipality of Iglesias. It is made up of Carignano variety grapes in purity, harvested from vineyards defined by a sandy and clayey soil. The harvest takes place manually, while the alcoholic fermentation of the must takes place in steel and concrete tanks, with a short duration.
As the name already suggests, Dark it is characterized by a dark, dense, impenetrable color. The nose reveals an equally dark fruity texture, with notes of flowers and spices. The taste is soft and with a discrete, well managed, tannicity.
To be paired with a beef escalope.
