The champagne most loved by the British royal house, by Winston Churchill and by James Bond in his films. Rich in style, the Bollinger Cuvée Special owes its name to William Folks, a businessman and great connoisseur of bubbles who, in 1911, after tasting it, argued that calling it simply Cuvée Sans Année was an understatement: a Champagne with a similar balance deserved necessarily a special definition. The "Special Cuvée" is the result of the skilful and delicate blend of a small part of vintage wine and a majority of reserve wines.
Tasting Notes
Brilliant straw yellow and crossed by infinite and very minute bubbles, it smells of white flowers, citrus fruits and biscuit, gunpowder, almond sugared almond, aromatic herbs and acacia honey. Sip balanced between freshness and softness, with a sapid and mineral trail to close it all.
Pairings
Excellent with an aperitif made with cubes of parmesan and mortadella (simple but effective), or with any dish based on raw or cooked fish or with white meats in sauces.
