Dom Pérignon creates only Vintage Champagne, elaborated from the best grapes selected in a single vintage. Dom Pérignon is inspired by the creative legacy of Dom Pierre Pérignon, a young Benedictine monk who grew up in Sainte-Menehould, in the Champagne-Ardenne region, who grew up in close contact with wine, working in the vineyards of his father and uncles. After becoming a priest, at the age of 30 he became treasurer and head of the vineyards of the Benedictine monastery of Saint-Pierre d'Hautvillers: an important task for a structure that basically supported itself by selling its own wine. His passion for oenological excellence led him to want to create the "best wine in the world" to serve his community and the glory of God.
Tasting Notes
Brilliant straw yellow with golden reflections, with a very fine and persistent perlage. On the nose the aromatic bouquet opens on delicate floral notes and on acidulous citrus and stone fruit notes. Anise and mint bring a pleasant freshness; the second nose emphasizes the finesse of the spicy, toasted and woody notes. On the palate, it appears perfectly consistent with the aromas revealed by the nose. Precise, elegant and tonic, it shows all its warm generosity, where the fruit dominates, enhanced by a lively acidity. Sapid, the finish continues on smoky notes.
Pairings
It is enhanced with smoked fish appetizers, fish tartare, steamed fish and crustaceans, but also with dishes rich in aromas, from a great Iberian ham to recipes based on white truffles.
