Dom Pérignon creates only Vintage Champagne, elaborated from the best grapes selected in a single vintage. Dom Pérignon is inspired by the creative legacy of Dom Pierre Pérignon, a young Benedictine monk who grew up in Sainte-Menehould, in the Champagne-Ardenne region, who grew up in close contact with wine, working in the vineyards of his father and uncles. After becoming a priest, at the age of 30 he became treasurer and head of the vineyards of the Benedictine monastery of Saint-Pierre d'Hautvillers: an important task for a structure that basically supported itself by selling its own wine. His passion for oenological excellence led him to want to create the "best wine in the world" to serve his community and the glory of God.
Tasting Notes
Brilliant straw yellow with golden reflections, with a very fine and persistent perlage. The sweetness of tropical fruit immediately shines on the nose: green mango, melon and pineapple. Then more temperate notes emerge: the tingle of an orange peel, the mist of a mandarin. The wine breathes and its freshness is revealed. Flowering after rain. A tactile sensation of peony, jasmine and lilac. On the palate the wine quickly reveals its full, rich, intense character. An interesting maturation and a tactile sensation follow the aromatic experience. On the palate the matter takes shape, generous, decisive, controlled. Then it strengthens, making the wine vibrate on spicy and peppery notes. The energy is prolonged, up to a magnificent salty finish.
Pairings
It is enhanced with smoked fish appetizers, fish tartare, steamed fish and crustaceans, but also with dishes rich in aromas, from a great Iberian ham to recipes based on white truffles.
