A Franciacorta of great personality, made up of a selection of grapes from an extraordinary morainic soil that gives the wine its savory flavor. It is made with Chardonnay and Pinot Nero grapes, which have always been harvested manually between the end of August and the beginning of September. After a soft pressing of the grapes, the fermentation takes place for 20 days in stainless steel, alternated later by a partial malolactic fermentation. After a first aging of 7 months, partly in steel and partly in barrique, the second fermentation takes place by refermentation in the bottle with a stay on its lees for 36-40 months.
Tasting Notes
Of great precision in the gustatory design, complex in aromas, with hints of grapefruit, black currant and walnut husk and unusual traces of laurel and green tobacco. Modulated, structured and clear to the taste, it closes long and pleasantly persistent.
Pairings
Fresh and deep, Contadi Castaldi's Dosaggio Zero is Franciacorta ideal for an aperitif, even with a margherita pizza.
