Fiorduva derives from an assembly of native grapes of Campania and in particular of the magnificent Amalfi Coast. The vineyards of Fenile, Ginestra and Ripoli are located in the municipality of Furore, home of the winery, and in the neighboring ones and rest on sandy and calcareous soils, extremely rich in minerals. The overripe grapes are harvested manually and arrive in the cellar intact. After soft pressing, the free-run must, after cold static clarification and inoculation of selected yeasts, ferments at a temperature of 12 ° C for about three months in French oak barriques.
Tasting Notes
Wine with a deep yellow color with golden reflections. The smell is reminiscent of apricot and broom flowers, with hints of exotic fruit. The taste is soft, dense and characterized by an important aromatic persistence of dried apricot, raisins and candied fruit.
Pairings
Perfect with all seafood dishes, even elaborate ones, based on fish and shellfish such as a rich fresh fish soup or spaghetti with anchovy sauce from Cetara. It lends itself well to pairing with mature and blue cheeses; balanced in combination with provolone del monaco DOP and pennata pear jam. Divine if tasted as a meditation wine.
